| Tom Douglas' Blueberry Crisp Recipe |
Prepare streusel mixture and refrigerate prior to cooking berry mixture
 Berry Mixture:
Fresh blueberries 540 g
Tapioca Starch ¾ tsp
Sugar 6 Tbsp
Lime Juice 1 Tbsp
Combine all ingredients, portion into bowls 140 g each. Bake at 350 for 5 minutes. Add ¼ c. streusel to top each bowl. Return to oven and bake 7 minutes longer.
Oat Streusel Mixture:
Oats 400 g
Brown sugar 640 g
All-purpose flour 300 g
Cinnamon 1 tsp
Nutmeg 1 tsp
Ginger 1 tsp
Butter 454 g
Combine all dry ingredients. Cut cold butter into small pieces and add to dry mixture. Mix on low speed until butter breaks down into smaller pieces (but doesn’t come together like dough). Refrigerate until cold, then break up into crumbles when topping blueberry mixture.

Makes about 4 servings as a garnish for meat, fish, or poultry
CORN & BLUEBERRY RELISH
1 cup corn kernels, cut from the cob
5 cups loosely packed mache leaves, trimmed, washed, and dried
1 cup fresh blueberries, picked over for stems
3 tablespoons mint leaves, torn into pieces
1 tablespoon thinly sliced chives

BLUEBERRY VINAIGRETTE
8oz. olive oil
4 oz. blueberry vinegar
4 oz. fresh blueberries, chopped
1 shallot, minced
1 t. Dijon mustard
1 t. fresh thyme, chopped
1 t. salt
Pinch of black pepper
Combine all ingredients and whisk.

SPICY BLUEBERRY JAM
5 c. blueberries
4 tbsp. lime juice
1 box powdered fruit pectin
3 c sugar
1 tbsp sambal oleak (fresh chili paste available at most grocery stores, make sure it is garlic free)
Pinch of salt
Washington ranks sixth in U.S. blueberry production with 9,000 acres of berries from 150 growers The state's blueberry season runs from July to September while processed ‘blues’ are available year round. Washington blueberries are grown in Skagit, Clark, Lewis, Snohomish, Thurston, Whatcom, Chelan, Yakima and Benton, Franklin, Walla Walla, and Grant Counties.
